Ingredients:
8 slices of Texas toast bread
1 8-ounce package of cream cheese, softened
1/3 cup peach preserves
5 eggs
1/2 cup milk
½ teaspoon vanilla
¼ teaspoon ground cinnamon
Dash ground nutmeg
Preparation:
Cut two pockets into each slice of Texas toast on opposite corners.
In a small mixing bowl stir together softened cream cheese and peach preserves.
Spoon about 1 tablespoon of the cheese mixture into each pocket.
In a mixing bowl beat eggs, milk, vanilla, cinnamon and nutmeg till combined.
Dip stuffed bread slices into egg mixture coating both sides.
Fry slices in a greased pan or griddle over medium heat, until golden brown, turning once.
Cut slices on the diagonal and serve with warm maple syrup.
